Like most mushrooms, crimini mushrooms can provide us with unique immune system support. Mushrooms are low in carbohydrates, calories, and sodium and are cholesterol- and fat-free. Crimini mushrooms are an excellent source of selenium, which helps to fight cancer. Other minerals in crimini mushrooms are copper, potassium, phosphorus and zinc. Potassium is the mineral best known for bringing down your blood pressure and reducing your risk of stroke.
- 1 lb crimini mushrooms
- 1 cup sliced leek
- 2 tbs sesame oil
- 1 tbs organic soy sauce ( shoyu )
- sesame seeds
- mustard greens
Add sesame oil to a stainless still frying pan. Cut crimini mushrooms in half and put on the pan. Saute mushrooms for 10 minutes periodically turning around. Add sliced leek and saute for another 5 minutes on a medium flame. Add shoyu and cook for 3 more minutes. A little bit of water can be added during cooking if desired.
Blanch or steam mustard greens for 20 seconds. Cool off and place nicely on a plate. Put sauteed mushrooms on top and sprinkle with roasted sesame seeds. Serve warm.
