Berry Cake with Jello Glaze

Vegan Cake Agar BerriesThese cake is healthy, tasty and EASY to make! It is a guilt free dessert which can be enjoyed even if you are on a weight loss mission. No dairy products, eggs or sugar is needed to prepare this delicious treat. It has a layer of cooked couscous, fresh strawberries, raspberries, and kiwi covered with jello made of apple juice and agar-agar. Agar-agar is vegan gelatin. It is extracted from marine red algae. It is sold as powder. Agar-agar does not have a taste and is easily dissolved in cold or hot water. Agar-agar has tons of medicinal properties which are listed down below.

 

Ingredients for cake:

1 cup organic whole wheat couscous

1.5 cups organic Edensoy vanilla soymilk (parve)

1 cup water

1/2 cup organic apple juice

1 pinch sea salt

Cooking Instructions:

Combine couscous, soymilk, water, apple juice, and salt in a cooking pan. Heat and cook on a medium to small flame for 10 minutes. Stir occasionally. It will become a nice soft mass. let it cool off a little and transfer it in a nice cake dish (I use glass or ceramic round). Smooth the surface by pressing into the dish with wet hands. Put in the refrigerator to cool down. Arrange berries and kiwi creatively.

Jello Glaze:

1 cup apple juice

1/2 cup water

2 tea spoons agar-agar

1/2 teaspoon grated lemon peel (optional)

Dissolve agar-agar in juice and water, add lemon peels. Heat and stir until it becomes translucent. Let it cool off a little. Pour carefully over berries.

Let it sit in the refrigerator for at least an hour until it forms into a nice jello glaze.

Serve and enjoy!

Medicinal properties of agar-agar
