Blanched Red Kale Salad with Seeds and Pecans

Quick and easy healthy nutritious salad. It is a great addition to any whole grain, or bean dish. It also works when combined with fried tofu or tempeh. This salad is an attractive party food and will be a beautiful decoration of your table.

Excellent source of vitamins C. It has cholesterol-lowering benefits; it supports the body’s detoxification system.


Organic Red Kale

Pecans Halves

Dried Cherries

Roasted Pumpkin Seeds

Roasted Sesame Seeds



Mix of freshly squeezed lemon juice, few drops of brown rice vinegar,  1 TS olive oil, a drop of shoyu souse

Cooking Instructions:

Check and wash kale.  Cut the stems out. Stems are usually cooked a little longer. Boil water in a pot of frying pan. Add stems and let them cook for 30 seconds; add the rest of the kale and blanch for another 20 seconds. Remove kale from the hot water and spread it out so it cools off quickly. You can put it on a bed of ice cubes to cool.

Slice kale and kale stems in ½ inch pieces. Mince parsley. Add dressing.  Garnish with dried cherries, pecan halves, roasted sesame seeds, roasted pumpkin seeds.

  2. Looks good! I shall have to give it a try. Did you know that cherries are helpful for people suffering from gout? I cook for someone like that, and I am glad to add another recipe to my list!
